I love Thai flavors, especially in a soup. I cook Thai dishes all the time! October is also my favorite time of the year! Love Fall foliage, leaves turning yellow and red - so pretty!

Katie, this soup was a huge hit with my coworkers. It's healthy, but you'd never know it by the creamy taste. I'm a lover of lentils too. I've always wanted to visit Alaska. Just made this soup and it's so yummy. I skipped roasting the pepper, just diced it up and tossed it in with the onion and carrots and I added some cauliflower that needed to get used up. Other than that I followed the recipe to the letter. Much more flavour than I expected and will make this again.
